Bean Sprout Namul Recipe [Sojasprossen Namul Rezept]

A quick and delicious recipe, but really sour!

Bean Sprout Namui for 4 (105kcal/serving)


300g soy beans (out of the glass)
2tbsp sesame oil
4tbsp rice vinegar
2tbsp sugar
1 garlic glove
1tsp salt
1tsp cayenne pepper

1. Peel the garlic and then chop. Let the soy beans drain. Pat dry with papertowels.


2. In a bowl, mix vinegar, sugar, salt and pepper.


3. In a pan, heat the oil. Fry the garlic on medium heat.
4. Add the sprouts and fry until they're coated in oil.
5. Put the sprouts in the bowl with the seasoning, mix and done!

Okonomiyaki Recipe (Okonomiyaki Rezept)

I'm making okonomiyaki, the Japanese style pancake, for quite some time now and despite it's unhealthiness, it's just so delicious, I have to cook it every now and then.
Since I have some experience, I've changed the recipe quite a lot... I'm highly allergic to shellfish, so this version of Okonomiyaki isn't containing any! If you like, you can add shrimps, octopus and calamari as much as you like!

This is for Okonomiyaki as main dish - one per person.

Okonomiyaki for 6 (800kcal/serving):


200g bacon
10 leaves of Chinese cabbage
200g Chinese yam
50g spring onions
3tbsp beni-shoga (red pickled ginger)
2 eggs
500g flour
2tbsp baking powder
600ml dashi stock
30g tempura flour (to make Tenkasu)
salad oil
salt
okonomiyakisauce (commercial)
mayonnaise
dried bonito flakes
(optional) aonori

1. Seperate the cabbage into hard part and leaves. Chop the stem part thinly and cut the leaves into 1cm pieces.
2. Cut the spring onions into rings. Grate the yam. Chop the beni shoga into fine pieces. Cut the bacon strips into 3cm pieces!
3. Let's make tenkasu! Mix tempura flour with water to make an almost fluid batter.
4. Now we're going to deep fry the batter. Heat enough oil in a pan to ca. 180°C. Add the batter drop by drop and fry until golden brown! Remove from the oil and lay on a plate covered with a kitchen towel.
5. Let's make the Okonomiyaki batter! Put flour in a big bowl. Add the dashi stock little by little and whisk. Add the grated yam.
6. Now add the ingredients. Add the cabbage, spring onions and ginger.


7. When the tenkasu has cooled down, add it as well and mix everything.


8. Let's make Okonomiyaki! In a pan, bring 2tbsp of salad oil to medium heat.
9. Pour 1/5 of the dough in the hot pan and quickly bring it into round shape!
10. Lay 1/5 of the bacon on top. Add a little more dough fluid on top, so the bacon will stick when it's turning time.


11. When the downside is browning and bubbles appear on the upper side, you have to flip the okonomiyaki over!
12. Fry until cooked through, then remove from the pan and repeat for the rest dough.
13. At the end, put on Okonomiyakisauce, mayonnaise and sprinkle bonito flakes and aonori!

Quatre-quarts Recipe (Quatre-quarts Rezept)

Today I'm going to show you a very easy cake with only a few ingredients! You should really try it out.

It's a French Quatre-Quarts and with my 8 years of French I am actually able to translate this one into "Four Quarters", which they call it because you use the same amount of the four main ingredients.


Quatre Quarts for a square cake pan of ca. 8cm x 20cm x 10cm (530kcal /serving (four) )


130g butter
130g sugar
130g eggs
130g flour
10g baking powder
optional vanilla essence

1. Take the butter out of the fridge and let stand until soft.
2. Preheat the oven to 180°C.
3.  Sieve the flour into a bowl. Add the baking powder and mix.
4. Beat the eggs.
5. Now knead the butter in a big bowl. Add the sugar, then the eggs, the vanilla and finally the flour. With a whisk, mix well.
6. Lay your baking pan with baking paper - it should fit perfectly.
7. Pour the dough inside the pan. Knock the pan a few times on a hard ground to remove the air from the dough.
8. Place in your oven and bake for about 40 minutes.
9. If done, place it on a grill and let cool down a bit. Then take the cake out of the pan, remove the paper and let cool down completely.
10. Cut in ca. 2cm thick pieces and done!

Bang Bang Chicken Recipe [Banbanji Rezept] (Banbanji Recipe)

This recipe seemed really odd to me and I wasn't sure if I would like it. The first bites are really weird ... but the more you eat, the better it gets! What a great dish.
You should note, that this is a cold dish!

Banbanji for 4 (360kcal/serving):


300g chicken breast
100g cucumber
1,2l chicken stock
60g spring onions
20g ginger
          For the sauce:
40g spring onions
10g ginger
4tbsp sesame paste (I took the Arabian Tahina, if you take Chinese or Japanse paste, you might need less sugar)
2tbsp rice vinegar
2tbsp soy sauce
3tbsp sugar
1tbsp sesame oil
2tsp chinese chile oil (called Ra-Yu or La-Yu)


1. For the broth, cut the spring onions into 2cm pieces. Cut the ginger into slices.


2. In a pot, bring chicken stock with spring onions and ginger to boil. Add the meat and let cook over low heat for ca. 20 minutes.
3. Take the pot from the plate and let everything cool on room temperature.
4. Cut cucumber into slices. For the sauce, chop the sprin onions, peel and chop the ginger.
5.Take 5tbsp of broth from the pot and but it in a bowl. Add sesame paste and vinegar. Add soy sauce and sugar. Add sesame oil and chili oil. Mix well. Now add the chopped spring onions and ginger.


Mix everything well.


6. Now take the meat out of the broth and pat dry with a kitchen towel. Cut into very thin pieces or rip with your fingers.
7. Arrange on a plate with the cucumbers. Add the sauce and done! You should serve rice with it.

Coq Au Vin Recipe [Coq au Vin Rezept]

While I'm sitting here and having dinner (commercial potatoe salad ... oh well) I thought I might as well post another recipe.
This time it's Coq Au Vin, a very famous French dish. I've heard about it during my first French class in high school. We had a weird book about Arthur le perroquet and other stuff...

For this recipe you need time to let the chicken rest!! So if you want to have Coq au Vin for dinner, you should prepare it around lunch.

Coq Au Vin for 4 (470kcal/serving)


4 chicken legs
400ml red wine
1 small onion
50g celery
100g carrots
2 garlic gloves
2 bay leaves
flour
30g butter
600ml veal stock (commercial product, of course)
salt and pepper to your taste

1. Peel the onion. Cut them into ca. 1cm cubes. Dice the celery into 1cm pieces.. Peel the carrots and cut the same size as the celery.
2. Without peeling, crush the garlic with a spoon.
3. Cut the chicken legs into two parts: thigh and drumstick.
4. In a big bowl, place onions, celery, garlic and carrots. Put the meat on top of the vegetables. Pour over the wine. Add bay leaves. Cover the bowl with plastic wrap and let it rest in the fridge for ca. 5 hours.


5. Take the meat out the wine and keep the marinade! The meat will have a very weird colour  now, but that's alright! Get the garlic gloves out of the marinade. You won't find them later.
6. Dry the meat with kitchen towles. Now put on a plate and season with salt and pepper.
7. Sprinkle the flour and turn, so the meat is covered.
8. Now, in a big pan, let butter melt over medium heat.
9. Lay in the meat, skin side down. Fry until the skin gets golden brown. Turn and keep frying until brown as well.


10. Pour over the marinade. Add the stock and bring to medium heat.


11. Bring to a boil, then reduce heat to low. Cover the pan and let simmer for about 20 minutes.
12. Then just taste with salt and pepper and you're done!!

Potato Wedges and Sour Creme Recipe [Kartoffelecken mit saurer Sahne Rezept]

I'm just going to explain how to make the wedges, since sour creme is a bought dip and you can use whatever dip you like. We had chilisauce. But ketchup or barbecue sauce is fine, too. Whatever you have.

This is so easy!! All you need is potates and enough oil. It's something you can make quickly, when you don't know what to cook.


Potato Wedges for 4 (450kcal per serving)


800g potatoes
Frying oil for deep frying

1. Cut the potates into wedges. When they're a little older and the skin is looking wrinkly, you might wanna peel them first. Lay them in a bowl with water and let sit for 5 minutes.


2. Now drain carefully and make sure to pat them dry.
3. In a pan, heat enough oil over high heat (not too high, the oil musn't smoke!).
4. Place the potatoe wedges piece by piece. If you add too much at once, the oil temperature will drop.
5. Fry until golden brown and then put on a plate (covered with a kitchen towel).

Enjoy your meal.

Fried Chicken Recipe [Frittiertes Huhn Rezept]

First of all, I'd like to say, I'm sorry, because I can't show you all recipes. That doesn' mean, I didn't make them, I just can't show you.

I made Lasagna and I can't show you, because I made them at my grannies home and forgot my camera. When I'm free, I'll post the recipe anyway, but without pics.

I also made (or tried to make) Gnocci di Zucca, which didn't turn out very well. I can't show you, because I screwed up the recipe and therefore can't explain you how to make them. I don't know, want went wrong. When I have time, I'll try to make them again.

Now I'm going to show you how to make fried chicken. This is a side dish, you have to serve it with something else. If you want to have it as main dish (without anything else), you have to double the ingredients.


Fried Chicken Recipe for 4 (400kcal per serving)


300g chicken breast
          For the seasoning:
1tsp paprika
1tsp garlic powder
1/2tsp cayenne pepper
1/2tsp salt
1/4tsp pepper
          For the dough:
160g wheat flour
1 beaten egg
100ml milk
Oil for deep frying


1. Cut the meat into bite size pieces.
2. In a big bowl (big enough to hold the meat as well) mix the spices well. Put in the meat and stir until coated.
3. In another bowl, mix flour, egg and milk and whisk.


4. In a big pan, heat the frying oil to high heat (not too high, the oil musn't smoke!)
5. Now we have to fry the chicken. Coat it well with dough (be careful, it's really sticky) and then place in the hot oil, piece by piece. Don't put it all in at once, because the oil temperature will drop.
6. Fry until golden brown. If you're pan isn't high enough, you may have to turn the meat once or twice.


7. You can serve with parsley and lemon slices.

Sweetcorn Soup Recipe [Chinesische Maissuppe Rezept]

Sweetcorn Soup Recipe for 5 (80kcal per serving)



250g sweetcorn (can)
800ml chicken broth (no salt!)
1/2 tsp salt
sugar and pepper to your taste
1 big egg
1 1/2 tbsp starch
2 1/2 tbsp water

1. In a small bowl, dissolve starch in water. Puree the corn with a handheld blender.
2. In a big pot, bring broth to a boil. Add corn puree and salt.
3. Now thicken the soup with the dissolved starch.
4. Now slowly pour in the beaten egg and wait until it stocked.
5. Taste the soup. If salty, you can add another egg white. It'll help.
6. Already done!

Salmon Steak Recipe (Lachssteak Rezept)

Just a little survey.
So far I've made 32 recipe and two months have passed. Thanks to my vacation I couldn't cook for two weeks, but I'm still good with time.

Now it looks like this:
297 days to go, 213 recipes to cook.

Thanks to this rhythm, I don't even have to cook every day. Thank God. I just sprained my ankle Sunday and now I can't cook for a few days, just because I can't stand in the kitchen.

Today I'm showing you my first fish recipe ... I actually bought a whole fish! It was less expensive than filets. Well. Stupid me. Of course you do have to fillet the fish yourself. And with my mum hysterically breathing and my dad on the run, it was my job to do so... I hope I'll never have to do it again... But I got 6 big pieces out of it! HAHA!

Soooo.

Salmon Steak with Mashed Potatoes for 6 (430kcal per serving)


     For the Fish:
6 pieces of salmon with skin
40g butter
2tbsp olive oil
100g tomatoe puree (This is Italian "passata" ... mixed cooked tomatoes with spices. You should try and find puree.)
200ml cream
50g dill
salt and pepper to your taste
lemon juice (fresh pressed lemon juice is best here - you'll need AT LEAST 1 lemon)
     For the Mashed Potatoes:
600g potatoes
30g butter
150ml-200ml milk
salt, pepper, nutmeg to your taste

1. Alright, let's cook! Lay the salmon on a big plate or board. First, sprinkle with lemon juice, salt and pepper from both sides to your tast and rub it in. In Germany, we say for fish, you need the "3 S: Säubern, Säuern, Salzen!" In English that means: Clean the fish, Acidify (with lemon) and then Salt. That's really important.


2. Chop the dill. Peel the potatoes and then cut into thin slices. Take the milk and butter out of the fridge and let warm ... you can also heat the milk a little in the microwave.
3. Put potatoes in a pot with lots of water. Cook over medium heat for about 10 minutes until tender.
4. While they cook, melt butter with the 2tbsp oilve oil in a pan (big enough for the fish or at least half the fish) over medium heat. Add the salmon skin side down and fry until golden brown. Then turn around and keep frying until brown. Then turn off the oven take out and let stand aside.


5. The potatoes should be done by now. Let them drain in a strainer. Then put them in a big bowl and mash them with a fork, a meat tenderizer or (if you have) a masher of course. Add butter and mix. Now add the warm milk little by little until the mashed potatoes have the consistency you like. Finally add salt, pepper and nutmeg to your taste. Cover and let stand in a warm place (like your bed), so it won't cool out.
6. Remove the fat from your frying pan.
7. Add the tomatoe puree, cream and turn to low heat. Add salt and pepper to your taste and let cook for a little while. Add dill and mix well.
8. Put back the salmon and let it warm over low heat.
9. Now you just have to arranged the salmon, mashed potatoes and the rest sauce on a plate and your done.

Nyt ditt måltid!

Ensalada Mexicana Recipe (Mexikanischer Salat Rezept) [Mexikan Salad Recipe]

A quick, low calorie AND delicious one. Even my dad likes it and he's not a vegetable person...


Ensalada Mexicana for 4 (250kcal per serving)


60g cucumber
100g green bell pepper
350g tomatoes
60g radish
1/2 small onion
8 leaves romaine radish
     For the dressing:
1 pressed garlic glove
4tbsp lemon juice
100ml olive oil
salt and pepper to your taste

1. Peel the cucumber, then cut into thin slices. Wash the bell peper. Cut into half rings. Wash the tomatoes and cut into wedges. Wash the radishes (you gotta wash them intensely, because their skin often keeps a lot of dirt). Cut into thin slices. Peel the onion. Cut into slices.
2. For the dressing, put pressed garlic and onions in a big bowl. Add the lemon juice and olive oil. Mix a little, then add cucumber, bell pepper and radish. Add the tomatoes. Add salt and pepper to your tast and mix well.
3. On a plate, arrange the salad leaves - two per serving. I arranged them heart wise. Put on the salad and then pour the rest of the dressing. That's already it! Just 3 little steps.

Melanzane Alla Parmigiana Recipe (Auberginenauflauf Rezept) (Eggplant casserole recipe)

When I was a child, I didn't like eggplants very much and although my taste has changed, I'm still a little nervous about buying and cooking them.
But this recipe was really good!

You shouldn't forget, that this is only a side dish! If you're making this casserole, you should serve rice or noodles or meat with it, otherwise people might still be hungry afterwards.

Melanzane Alla Parmigiana for 4 (280kcal pro portion)


1 medium size eggplant (ca. 280g)
flour
250g tomatoe sauce (commercial)
200g mozzarella
50g parmesan
12 basil leaves
olive oil
frying oil
salt and pepper to your taste
a casserole

1. Shortly wash the eggplant. Remove the stem. Cut into thin slices. You should cut them the same thickness, so they'll fry evenly later.
2. Cut the cheese into 5mm cubes. Cut the basil into stripes.


3. Lay the eggplant on a plate and sprinkle with salt and pepper. Roll them in flour.
4. Preheat the oven to 250°C.
5. Heat frying oil in a pan to 180°C. Deep fry the eggplant until golden brown. Then lay on a plate with paper towel.


6. Oil the casserole. Pour in one half of the tomatoe sauce. Lay one half of the fried eggplants.
7. Pour the rest sauce. Then sprinkle half the cheese and all the basil. Lay on the rest eggplants and cheese.


8. Place in the oven and bake for 10-15 minutes. Now just arrange.

Chinese Cabbage Salad Recipe (Chinakohl Salat Rezept)

A very healthy and yet low calorie and filling recipe for people on a diet! Of course that's not all you can eat, you also need some calories with it.

Chinese Cabbage Salad for 4 (75kcal pro portion)



300g Chinese Cabbage
5tbsp sweet corn
cherry tomatoes
one lemon
          For the dressing:
4 tbsp rice vinegar
2tsp sugar
2tbsp sesame oil
salt

1. Cut the Chinese Cabbage into thin stripes. Lay in room temperature water for ca. 5 minutes.
2. Cut the tomatoes into half. Cut lemon into quarters. When you're taking the corn out of a can, let it drain.



3. In a bowl, mix vinegar, sugar and salt. Add oil and mix well.
4. Take the cabbage out of the water and draing. Then arrange everything on a plate and put the lemon quarters aside.

Macaroni & Cheese Recipe (Makkaroni und Käse Rezept)

Mac'n'Cheese is one of the most popular dishes in the US - strangewise it has not reached Europe yet.

Well, I like it very much, cause it's easy, you don't need much and it's very tasty and filling. You should definitely try it out, especially when you have kids. They love it.

Macaroni & Cheese for 4 (610kcal per portion)



350g cooked macaroni (or other short noodles)
20g butter
2tbsp flour
200ml milk
300g cheddar cheese
salt, pepper and nutmeg to your taste (nutmeg is optional)

1. Cut cheese into 1cm cubes. Let milk stand for a while, so it gets room temperature.



2. Now we need to make a roux and you need a big pan or pot (everything has to fit in). Melt the butter over medium heat. While stirring (you gotta keep stirring!!) add the flour little by little. When it's all "sweating" (that's means the colour keeps white til cream coloured and small bubbles are developing) add the milk and stir. When you're getting clumps while stirring, take the pot of heat.
3. Reduce to very low heat and add the cheese. Stir well until there are no more cheese clumps.




4. Add the macaroni and mix well, so that everything's coated.
